- 1 cup peeled and chopped cucumber
- 1/4 cup olive oil
- 1 1/2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/2 clove garlic 1 1/2 teaspoons dill weed
- 1 teaspoon minced onion
- Put everything except the dill weed and onion in a blender and process until smooth and creamy.
- Add the dill and onion. Blend long enough to mix them in.
- Store in the refrigerator for up to 3 days.
